Sri Lanka
The cinnamon of Sri Lanka is an entirely distinct species from the cassia cinnamon commonly available on the world market. Called Ceylon cinnamon, it comes from the inner bark of the Cinnamomum zeylanicum Blume tree and is more supple than its common cousin. Ceylon cinnamon is said to be even more aromatic than cassia cinnamon.
